On the first floor, the Brasserie, currently known as 58 Tour Eiffel, will undergo a captivating metamorphosis under the guidance of two-starred Chef Thierry Marx. Before embarking on extensive renovations from September 2019 to February 2020, the Brasserie will offer a tantalizing preview of Thierry Marx’s culinary vision with new dinner and lunch menus starting March 13th.
The architectural redesign of the Brasserie, led by Ramy Fischler and Nicola Delon, will create a spacious and inviting atmosphere. The restaurant will be divided into “islands,” offering panoramic views of the city and highlighting the Tower’s original structure.
Thierry Marx’s vision for the Brasserie is to create a “universal” dining experience, serving up a Parisian bistro cuisine with a focus on simple, fresh ingredients. The Brasserie will also champion environmental responsibility and social awareness, sourcing ingredients primarily from within a 200-kilometer radius of Paris and minimizing waste.
